Ultimate Fighting Championship is based on the No Limits martial arts tournament of the same name. What distinguishes the game (and its real counterpart) from wrestling, boxing, and other combat is the variety of fighting styles used; it is perfectly possible to end up with a judo master facing a kickboxer.

The actual gameplay is quite simple. You have various basic moves, combos, holds, etc. Complications come in the form of a huge list of moves, with many different styles. Punch your opponent until they are knocked out, or force them to punch earlier.
